Home Cooked Goodness with Peppadew
I’m not sure if you know this but I love to cook, its never a chore, I do it for pleasure, creating tasty meals every day from scratch. I love baking too, we always have home made things to go with morning coffee, nothing processed or shop bought in a packet. It’s taken many years to master everything but I always give it a go. We even make all our own bread. I am lucky that I can as I know that many can’t but if you get into a routine of organising your store cupboards, making weekly menus and the weekly grocery shop it does make it that little bit easier to do.
Sometimes you stumble across something that elevates one of your simple staples. Peppadew sweet piquante peppers are just that, little flavour bombs in a jar. It takes all the faff out of deseeding and peeling by hand, being pickled they last for weeks staying crunchy and flavoursome, sweet and zingy.
I added them to a vegetable chilli as they really added flavour and a little heat as they are mildly spicy. They made a great topping to focaccia too, popping a slice of pepper, olive and rosemary in the dimples before covering in olive oil and seasalt. It adds a little surprise of sweetness which elevates the bread to the next level.
There are many fabulous recipes on the Peppadew website to have a go at. We’ve already added them to a mid week minestrone, tonight they are going to be added to a roast potato dish with fish. Who knows what I’m going to add them to next, the possibilities are endless.
